Kofta Balls with Homemade Tomato Sauce


Kofta Balls

2 cups shredded raw cabbage
2 cups shredded raw potatoes (place in colander for 30 minutes
until most of the liquid is drained off)
Combine cabbage and potatoes.
Add: 1 tsp, salt
1 tsp. garam masala
1 tsp. ground cumin
1/2 tsp. turmeric
1/2 tsp. coriander powder
1 cup flour

Mix all well. Form into balls or fat patties and fry in olive oil or
your choice oil until crispy. Drain on paper towels or on the inside
of a brown paper bag.

10 minutes before serving, add kofta balls to hot tomato sauce to
soak up the flavor. Serve on brown long grain rice which has been
seasoned with salt/pepper/olive oil/garlic and curry powder.


HOMEMADE TOMATO SAUCE

4 TB olive oil
1/2 large onion, chopped
1/2 bell pepper, chopped
1/2 pkg. mushrooms
1/2 bunch cilantro
1 TB sesame seeds
1 tsp. cumin seeds
1/4 tsp crushed red pepper
4 cups crushed tomatoes
1 TB sugar
2 tsp. salt

Saute onion, peppers, mushrooms in olive oil until onions are translucent;
Add cilantro, sesame seeds, cumin seeds, and crushed red peppers.

Cook 1 minute; then add tomatoes, sugar and salt.
Simmer until desired thickness.
